Frugal Veggie Crustless Quiche

This is not vegan, just veggie :)

 

VEGGIE CRUSTLESS QUICHE

 

3 eggs

1 cup of milk (you can also use yoghurt or cottage cheese)

1/4 cup water

1 cup flour

1/2 cup grated marbled cheese (you can use any type of cheddar)

2 Tbsps Feta Cheese (optional,, I just had this in my fridge)

1 tsp dried dill

salt & pepper

1 cup frozen broccoli (You can use other veggies, if using spinach,

use 1/2 cup at the most. You can also just use 1/2 cup of veggies

instead of a full cup, i just love broccoli!)

 

Preheat oven to 425F. Grease pan. Mix all ingredients well and pour

into pan. Bake for 30-35 minutes till firm. Serve with side salad.

Serves 4-6 depending on how large you cut the pieces.

 

You can also

experiment with different spices. I find that dill gives this quiche

a nice touch. I served it with a side low fat ceasar salad.
