This is my favorite chili spice recipe. Not too hot, but not too wimpy either. It came from a little gift pack I got while attending a media event for the opening of a local restaurant about a year and a half ago.

CINNAMON-CHILE RUB

 

1/2 c. red chile powder

1/2 c. paprika

1 T. ground cinnamon

2 T. ground coriander

1 T. granulated onion (or onion powder)

2 T. salt (it calls for kosher salt, I dunno what the difference is)

1 T. sugar

 

Mix all ingredients & store in an airtight container until ready to use.

I really like it. I love adding it to my favorite black bean chili recipe & I also add it to canned corn to spiff it up a bit. The cinnamon is almost unnoticeable, but it's still there with a subtle taste. :-) in the gift pack they gave us a neat little kerchief filled with the spice mix & a little booklet tag tied to it with the recipe. :-)

I love Chili. Is this really good with the cinnamon??? Have you triedit??? Sounds VERY interesting!!!
