Guest guest
Hi, I just copied this yesterday and haven't had a chance to try it yet, so don't know how it is. Maybe it could be thinned a little for dressing? I don't know: Green Goddess Dip 1 cup loosely packed sprigs of flat-leaf parsley 1/2 cup chopped green onion (both green and white parts) 1/2 cup water 1 package (10 ounces) silken firm tofu, mashed 2 tablespoons lemon juice 1 tablespoon olive oil 2 teaspoons minced garlic 1 teaspoon sugar 1/2 teaspoon freshly ground black pepper Dash of salt or to taste In a small saucepan, place the parsley, green onion and water. Cover and bring the water to a boil over medium heat; simmer until the green onion is tender and the parsley is wilted, about 2 minutes. Drain well. Place the cooked parsley mixture into a food processor or blender along with the tofu, lemon juice, oil, garlic and sugar. Pulse until smooth, Adjust the seasonings with salt and pepper. Cover and refrigerate 30 minutes before serving. This can be prepared up to 3 days ahead. hope it works for you, cheryll , " Megan Milligan " <yasminduran@l...> wrote: > Does anyone have a recipe for Green Goddess salad dressing that doesn't call for anchovy paste? > > Megan
