Red Pepper and Goat's Cheese Soup

 

For Veggies who allow cheese. S'pose you could try the soy stuff in it.

results not guaranteed.

 

Ingredients (serves 6)

1 large onion, finely chopped.

1 large cooking apple, peeled, cored and roughly chopped.

4 large red peppers, de-seeded and roughly chopped.

3 pints vegetable stock.

5 oz Fetta, diced .

3 fl oz dry white wine.

 

Method

1. Simmer the onion in 1/4 pint of stock until the onions are soft (about

15min).

2. Add white wine to pan and simmer for a couple of minutes.

3. Add apple and peppers and the rest of the stock to the onions and simmer,

partially covered for about 1/2 hour until the peppers are soft.

4. Remove from heat and add the Fetta.

5. Liquidise.

6. Serve.
