Guest guest Posted December 29, 2001 Report Share Posted December 29, 2001 This was good, easy, and very quick, just be sure to cook your wheat berries ahead of time so you'll have them on hand to dump in. White Beans with Greens & Wheat Berries 1 Tbsp olive oil 1/2 cup chopped onion 1/2 cup chopped zucchini 1/2 cup yellow squash 1 cup packed chopped escarole (about 1/2 head) or other greens 1 1/2 cups cooked white beans (cooked from dry or canned/drained) 1 cup cooked wheat berries (whole grain wheat) salt & pepper to taste grated parmesan In a large skillet saute chopped onions until golden brown, add squashes and saute a few minutes more until softened. Add greens and cook, stirring, until wilted, about 3 minutes longer. Add beans, wheat berries and salt & pepper and cook about 2 minutes longer, until heated through. Sprinkle with parmesan when serving, if desired. I used Chard and canned Great Northerns.
