2 quick 'asian' side dishes

In my efforts to be vegan, I've turned to an old

friend, soy sauce. These are both some quick recipes

to use either as a side-dish or a lunch, hope everyone

else enjoys. :)

 

Chinese Salad Dressing

2 tablespoons soy sauce (use low sodium, 2 tablespoons

normal is 75% of your daily sodium!)

4 tablespoons lemon or lime juice

1/2 - 1 teaspoon sugar

1/4 of a cup vegetable broth

(use 1 buillion cube in 1/2 a cup water, or canned

vegetable broth)

1 teaspoon crushed fresh ginger

 

Mix together and serve over green leafy salad, tomatos

and cucumbers, or as I did, cold noodles. I also add

sesame seeds.

 

 

This is a recipe I throw together with no attention

paid to amounts, but this is pretty accurate:

 

about 1 tablespoon olive oil

1 cup and 1/2 combined of any of the following:

carrots, onions, mushrooms, lettuce and/or bean

sprouts.

2 teaspoons sesame seed oil

2 teaspoons soy sauce

1 cup rice to 2 cups water

1 teaspoon olive oil

 

Combine rice, water and teaspoon olive oil, bring to

boil, cover and simmer.

When the rice begins to boil, start preparing

vegetable mixture. Chop onions, mushrooms, carrots,

lettuce (whichever you use) and saute in olive oil

over medium heat. When soft, add sesame seed oil and

soy sauce, cook about 1-2 minutes more. About now rice

should be ready, when it is, combine rice and

vegetable mixture. You might want to add a bit more

soy sauce, if you want a bit more flavor. top with

sesame seeds.

 

 

Could anyone tell I have a penchant for sesame seeds?

Oh, and I'm not sure if it was this list, but if so,

whoever sent in the Easy Vegan Double Chocolate

Cupcakes - they were wonderful, and fooled everyone

else in this house! Thank you.
