Guest guest Posted December 11, 2001 Report Share Posted December 11, 2001 This recipe is not very, very quick but rather easy to make and give as gifts to people (so faster than shopping for people, wrapping the gifts, etc Mexican Wedding Cookies - Rich cookies traditionally served at weddings and other festive occasions. Oven at 350 degrees 1 cup butter ½ cup powdered sugar, sifted 1 tsp Mexican vanilla (regular vanilla extract can be used) 1 ½ cups flour, sifted ½ cup soy flour, sifted 1/4 tsp salt 1 cup pecans, finely chopped powdered sugar to decorate Cream butter, ½ cup powdered sugar and vanilla. Add flours, salt and nuts and blend thoroughly. Shape the mixture into two long rolls - about 1 ½ " in diameter. Wrap each roll in waxed paper and refrigerate for 5 hours or overnight. Unwrap each roll and cut into 1/4 " slices. Bake on an ungreased baking sheet (space 1/4 " apart) for 15 - 20 minutes, or until the cookies are lightly browned. Remove from the cookie sheet and roll in the powdered sugar - do not let cool or the sugar will not adhere to the cookie.
