It is nice that you posted an intro, Giovanna.

I also have a few tomato sauce recipes you might enjoy.

I think all of them are here in the files already, but I

can also repost them to you onlist.

Easy Tomato Sauce for lasagne or casseroles

1/2 cup onion, finely minced

1 carrot, grated

2 cups fresh mushrooms, sliced or chopped

1 Tbs. olive oil

2 cans (8 oz each) tomato sauce

1 can (6 oz ) tomato paste

1 tsp dried oregano

1 tsp dried basil

In hot oil, sauter onion and mushrooms until tender.

Add carrot, tomato sauce, tomato paste, oregano,

and basil. Simmer for 10 minutes. Add a bit of water

gradually while stirring if sauce is too thick. Simmer

longer if sauce is too thin.

Slow-cooked Spaghetti Sauce

1 package Yves veggie ground round (other brand if you prefer, but

enough to

equal one pound)

1 medium onion, chopped

1 Tbs olive oil

2 can (14.5 oz each) diced tomatoes, undrained

1 can (8oz) tomato sauce

1 can (6oz) tomato paste

1 bay leaf

1 Tbs brown sugar

4 garlic cloves, minced

2 tsp dried basil

2 tsp dried oregano

1 tsp salt

1 tsp dried thyme

Hot cooked spaghetti

In a skillet, saute onion and Yves ground round in oil

until onion is soft. Transfer to the slow-cooker (crock pot).

Add the rest of the ingredients; stir. Cover and cook on low

for 7 to 8 hours. Discard bay leaf. Serve over spaghetti.

Yield: 6 to 8 servings

*I always add 1 Tbs minced capers to this recipe and

some chopped green peppers if I have them in house.

To make a spaghetti sauce using this mix, combine the
