Guest guest Posted October 3, 2003 Report Share Posted October 3, 2003 hi everyone! the weather has been chilly here in virginia, so i made this hot chocolate tonight. it was delicious. i used 3 tsp. of splenda instead of 2 T. of sugar. next time, i'm gonna try it with soymilk. also, the fall issue of eating well magazine has a vegetarian thanksgiving menu with several recipes. i think you can get a couple of the recipes online (the link is below). i can't wait to make and try the mashed garlicky potatoes with portobello gravy. if it turns out as good as it sounds, i'll post the recipe. Hot Chocolate [from Eating Well Fall 2003] www.eatingwell.com This version of hot cocoa is rich and chocolaty without the overly sweet taste of some prepackaged mixes. We suggest a whisk or a blender to froth the drink, but you can also use the gadget designed to froth milk for cappuccino. 2 tablespoons sugar 4 teaspoons unsweetened cocoa powder 1 cup low-fat milk, divided 1/4 teaspoon vanilla extract Pinch of ground cinnamon 1. Mix sugar, cocoa and 2 tablespoons cold milk in a mug until smooth. Heat the remaining milk in a small saucepan on the stovetop or in a 2-cup glass measure in the microwave (1 minute 45 seconds on high) until steaming hot but not boiling. Stir in the cocoa mixture and vanilla. 2. To froth the hot chocolate, whirl a whisk in it by rubbing your hands back and forth. (Alternatively, pour the hot chocolate into a blender, cover with the lid and a kitchen towel and blend until frothy.) Pour it back into the mug and sprinkle with cinnamon. Makes 1 serving. Per serving: 247 calories; 6 g total fat (4 g sat, 0 g mono); 20 mg cholesterol; 42 g carbohydrate; 9 g protein; 2 g fiber; 127 mg sodium; 261 mg calcium. Variation: Substitute vanilla soymilk for low-fat milk. Reduce sugar to 4 teaspoons and omit vanilla extract. Per serving: 181 calories; 4 g total fat (1 g sat, 0 g mono); 0 mg cholesterol; 31 g carbohydrate; 7 g protein; 2 g fiber; 97 mg sodium; 311 mg calcium.
