Yield 1 cup Time 5 minutes, plus refrigeration Tools ޥ kitchen towel ޥ food processor or blender ޥ small container with lid Ingredients ޥ 1 c firm silken tofu ޥ 1-2 T nut milk ޥ 1T lemon juice ޥ 1 t soy sauce or tamari ޥ 1/2 t nutritional yeast flakes ޥ 1 t sweetener (optional): raw sugar, maple syrup, or brown rice syrup Directions Drain the tofu, wrap in towel, and squeeze out excess moisture. Place all ingredients in food processor and blend until smooth, 1-2 minutes. Taste and adjust: add more tofu/milk for a thicker/thinner consistency; more sweetener/lemon for sweeter/less sweet flavor. Transfer to container, cover, and - for best flavor - refrigerate overnight. Use within 4 days.
