Guest guest Posted September 30, 2003 Report Share Posted September 30, 2003 Green and Red Tomato Salad 1/2 cup olive oil 3 Tbs red wine vinegar 2 Tbs lemon juice 2 garlic cloves, minced 1/2 tsp ground cumin 1/8 tsp pepper 3 medium red tomatoes, diced 3 medium green tomatoes, diced 1 small red onion, thinly sliced into rings 3 Tbs fresh or 1 Tbs dried minced basil In a small jar witha tight-fitting lid, combine the oil, vinegar, lemon juice, garlic, cumin and pepper; mix well. Refrigerate. In a large bowl, combine the tomatoes, onion and basil. About 30 minutes before serving, add the dressing and toss. Yield: 18 servings Nutritional Analysis: On 1/2 cup serving equals 63 calories, 4mg sodium, 0 cholesterol, 3gm carbo- hydrate, 1gm protein, 6gm fat.
