[recipe] Stuffed Celery Snacks

My daughter and I fixed these for our movie night snack

this weekend when she had a friend spending the night.

They were really great. I found the recipe in a cookbook

I had but it called for regular cream cheese. I used lite and

they were lowfat and yummy.... I so wish I could find vegan

cream cheese around here.

 

Stuffed Celery Snacks

 

1 package (8 oz) lite cream cheese, softened

1/3 cup shredded carrot

1 1/2 tsp dried parsley flakes

1/4 tsp dried thyme

1/4 tsp onion salt

Celery ribs, cut into 3-inch lengths

 

In a small bowl, combine cream cheese, carrot and

seasonings. Stuff into celery. Cover and chill for at

least one hour.

Yield: about 2 dozen

Looks interesting but this is what the page said when

Sounds like I'd have to find a place in my area that sells

it. I can't imagine ordering something that needs

refrigeration through the mail. But thanks...I'll keep

checking their site to see when they update it.
