Perfect to make for dessert this time of year when the apples are at their peak. Upside-Down Apple Gingerbread 1/4 cup vegan margarine, melted 2 large tart apples, peeled, cored and sliced 1/3 cup packed brown sugar GINGERBREAD: 1/2 cup vegan margarine, melted 1/2 cup molasses 1/2 cup sugar 1/3 cup packed brown sugar 1/4 cup applesauce 2 cups all-purpose flour 1 tsp baking soda 1 tsp ground cinnamon 1 tsp ground ginger 1/2 tsp ground cloves 1/2 tsp salt 1/4 tsp ground nutmeg 3/4 cup hot tea Pour margarine into a 9-inch baking pan. Arrange apples over margarine; sprinkle with brown sugar and set aside. For gingerbread, combine margarine, molasses, sugars and applesauce in a mixing bowl; mix well. Combine the dry ingredients; add to sugar mixture alternately with the hot tea. Mix well; pour over apples. Bake at 350 degrees for 45 to 50 minutes or until cake tests done. Allow to cool for 3 to 5 minutes. Loosen the sides; invert onto plate. Serve warm.
