Guest guest Posted September 22, 2003 Report Share Posted September 22, 2003 Hi Well, Mary Shomon thinks some people can get away with very small amounts of soy foods and, also, the veggies that are considered " bad " for hypothyroid (broccoli, cabbage, spinach, and a few others) in small amounts and IF they are COOKED. Her book, Living Well with Hypothyroid, is a suggestion. Much more info that could be helpful to your wife is in that book. It's possible your wife isn't " overindulging " on the soy, but there are alternatives - This is why I've recently gotten into the making of gluten meat (seitan) as a meatless protein. It can mimic most meats and poultries and even fish - with a good recipe, of which there are many....I made Joanne Stepaniak's vegan (seitan) ribs at home, and my whole family adored them! It was SIMPLE to make, using vital wheat gluten. Took about 2 minutes to mix, and about another minute or two to shape into " ribs " ... Was pan browned, then baked with caramelized onions and BBQ sauce and was YUMMMMMMY! Highly recommend Joanne's book, Vegan Vittles (and, her other book Vegan Deli - plus co-authored cookbook called Ecological Cooking Also, there are MANY bean/seed/nut/grain combo dishes, including vegan loafs, chilis, and patties, to create nutritional variety.
