ok how can i chage this to vegan?

ok found this...now how do i change to vegan? ideas anyone...we are

having 3 vegan days in a week...any help is appreciated

Cheesy Spinach Pesto serves 4-6

Amount Measure Ingredient -- Preparation Method

10 ounces spinach -- chopped

1/2 cup water -- hot

1/2 cup lowfat cottage cheese

2 tablespoons basil -- dried

1/4 cup parmesan cheese

2 cloves garlic

 

Thaw and drain spinach well. Combine all ingredients in a blender or

food

processor and process until smooth. You may add additional water one

tablespoon at a time if necessary to blend.

Freeze in quart size freezer bags or 3 cup freezer containers.

To Serve:

Thaw the pesto thoroughly. Warm over low heat on stove or in

microwave.

Toss with hot cooked spaghetti.
