[recipe] Summer Apple Salad

I saw this in a newspaper recipe section and even

though it was called summer apple salad, I think

autumn is the best time for this with our apples at

their peak. It is very good and I only adjusted a few

ingredients which I posted below.

If you can get vegan sour cream then give that a try

and make it a vegan dish. :)

 

Summer Apple Salad

 

3 medium tart red apples, cored and diced

1 can (8 oz) pinapple tidbits, drained

1 cup sliced celery

1 cup grape halves

1 medium carrot, shredded

1/2 cup coarsely chopped almonds

3/4 cup sour cream

1 Tbs sugar in the raw

1/2 tsp lemon juice

 

In a salad bowl, combine apples, pineapple, celery,

grapes, carrot and almonds. In a small bowl, combine

sour cream, sugar and lemon juice; mix well. Add to

apple mixture and toss to coat. Chill well before serving.

Yield: 12 servings

Tofutti Vegan Sour Cream is very good!!
