I personally never liked eggs even before I became a vegetarian thougb I could deal with them if they are part of a recipe and dont stick out like a sore thumb even something like quiche can taste pretty good. now onto the eggplant parmi issue. my mom has always made it without eggs. now dont forget I'm not good at telling exacting recipes so I will throw some ideas at you and the basic structure and you folks can play with it from there cause the basics of the other recipe are kind of there anyway. you soften the eggplant by put salt on the pieces and put them in a bowl then boil some water and pour the boiling water over the pieces and let them soak awhile. then pat them dry with paper towels and fry them up. then put them in the casserole dish and put some bread crumbs on them along with the parmi cheese, spaghetti sauce, mozzarella cheese and reapeat this so basically you will be making stacks.OK NOW THIS IS IMPORTANT: I really hate the tough pieces of the upper eggplant so you shouldn't include them either toss it or hack em up and make ratatouli or use them if you want to be mean lol. very important also spray the bottom of the casserole dish with PAM and put a coating of sauce down there too. put foil on top of casserole and cook at 350 til it smells ready and take the foil off the last 15 minutes. like I said I aint exacting with recipes but they do taste good and we eaten this eggplant parmi many a time and it rocks. hope you can decipher all my babble oh and put in any seasonings you want lol stay cool, Dave Quote Link to comment Share on other sites More sharing options...
