Guest guest Posted September 8, 2003 Report Share Posted September 8, 2003 I'm always on the lookout for a good salad recipe, and with all that great end-of-the-summer produce on sale, this fit the bill. I found it in a recipe magazine, but it didn't include any herbs in the vinegar dressing. I added a pinch of this and dash of that out of my spice drawer so feel free to just do whatever you personally enjoy. I loved it but my children hated it. *lol* More for me! Better the second day as the flavors had more time to combine. Pepper Cup Salad 6 celery ribs, thinly sliced 2 medium tomatoes, diced 3 green onions, sliced 3 Tbs olive or canola oil 1 Tbs red wine vinegar 3 large green bell peppers Dried herbs and spices; your preference In a bowl, combine the celery, tomatoes and onions. Combine the oil, vinegar and whatever dried herbs you wish; drizzle over the vegetables and toss to coat. With a sharp knife, cut pepper in half lenght-wise; remove seeds. Cut a thin slice off from the bottom of each pepper bowl so it will sit straight and not tip. Fill with vegetable mixture. Cover and refrigerate until serving.
