two collard greens recipes

i've veganized this recipe from the " new soul food cookbook " by wilbert

jones. hopefully it works, as i have not tried it. my collards cooking

attempts

have always failed miserably, and i'm usually a really good cook. oh, well.

for those of you in the chicago area, the vegetarian express gourmet on

111th and whipple (which is quite possibly the best vegan restaurant in the

universe) has killer collards.

 

VEGAN COLLARD GREENS

 

-3 lbs collard greens, rinsed and chopped

-1/2 lb chopped smoke-flavour tofurkey or possibly just smoke flavour (the

original recipe calls for 1/2lb smoked turkey breast; use your favourite

substitute)

-1 cup veg broth

-1/2 cup minced onion

-1 tsp crushed red pepper flakes

-1 tsp minced celery

-1 tsp freshly ground black pepper

 

place collards and tofurkey in a large pot. cover with water and cook on

medium heat, covered, for 20 minutes. add the broth, onion, red pepper flakes,

celery, and black pepper, and cook on a low-medium heat, covered, for about

an hour. serves 8.

calories: 95

sodium: 78mg

calories from fat: 6

carbs: 13g

protein: 11g

cholesterol: 24mg (veganized this should be 0)

fat: 1g

ETHEL'S MEATLESS GREENS

taken directly from " wow! i can't believe this is vegetarian food! "

-3 bunches of your favourite greens (collard, turnip, mustard)

-1 box lipton onion soup mix (2 packs inside)

-3 tbsp olive oil

-1 tbsp vinegar

-4 cups water

-2 tbsp brown sugar

-1/2 cup chopped onion (optional)

-1/2 cup bell peppers (optional)

-lawry's seasoned pepper

 

pick, cut, and wash greens well.

place greens in a large pot with water.

add onion soup mix, olive oil, vinegar, brown sugar, and seasoning.

add lawry's seasoned pepper to taste.

add onions and peppers if you like.

place on stovetop and bring to a boil.

reduce heat and cook for approximately 1 hour or until tender to taste.
