Teriyaki Noodles (this is a very quick and easy to make dish and it's good too!)

You will need:

1 cup hot water

6 dried Chinese black or shiitake mushrooms

8 ounces uncooked soba noodles or whole wheat spaghetti

1 tablespoon vegetable oil

1 large onion, sliced

1 package sliced mushrooms

8 ounces fresh shiitake, crimini, or baby portabella mushrooms, sliced

1/3 cup teryaki sauce

1/4 cup chopped cilantro

Directions:

1. Pour water over dried mushrooms in small bowl. Let stand 20 min., then drain.

Rinse with warm water and squeze out moisture. Remove stems and cut caps into

1/2 in. strips.

2. Cook and drain noodles.

3. Heat oil in 12 in. skillet or wok over med.-high heat. Add onion; stir fry 3

min. Add all mushrooms. Stir in teryaki sauce; reduce heat. Parcially cover and

simmer for 2 min. Stir in noodles and sprinkle on cilantro.
