(Recipe) Carrot Cake

Carrot Cake

 

Directions

1 1/2 cup. cooking oil

2 cup. sugar

3 eggs, added 1 at a time

2 cup. grated carrots

1 cup. crushed pineapple with juice

1 cup. coconut

2 tsp. baking soda

1 tsp. salt

2 tsp. cinnamon

2 cup. flour

1 cup. nuts, coarsely chopped

 

Combine the first six ingredients, mixing well. Sift together flour,

baking soda, salt and cinnamon. Add to wet mixture, beating 2 minutes at

medium speed or 300 vigorous strokes by hand. Stir in nuts. Pour into a

greased and floured 9x13 inch pan. Bake at 350° for 45 minutes.
