Guest guest Posted August 4, 2003 Report Share Posted August 4, 2003 Cheesy Asparagus 2 pounds fresh asparagus, cut into 1 to 1-1/2 inch pieces or (16-ounce) frozen asparagus 1/4 cup water (or 2 tablespoons if using frozen asparagus) 3 tablespoons butter or margarine, divided 1/2 cup fine dry bread crumbs 1/4 cup cashews (optional) 2 tablespoons all-purpose flour 1/4 teaspoon salt 1/4 teaspoon dry mustard 1/8 teaspoon pepper 1 cup milk 1 cup shredded cheddar cheese or cubed Velveeta cheese Combine asparagus and water in 1-1/2 quart casserole; cover. Microwave on high 8 to 12 minutes, or until tender, stirring once. Drain; set aside. Melt 1 tablespoon of butter in a small bowl on high for 30 seconds. Mix in bead crumbs and cashews. Set aside. Melt remaining butter in a 1 qt. measuring cup on high 30 seconds. Stir in flour and seasonings. Blend in milk. Microwave on high 3 to 5 minutes, or until thickened and bubbly, stirring after 2 minutes and then every minute. Remove half of asparagus from casserole. Spread remaining asparagus evenly in dish. Pour on half of sauce. Sprinkle half of cheese over sauce. Repeat layers. Top with crumb mixture. Microwave on high 1 to 2 minutes, or until hot and bubbly.
