Guest guest Posted August 4, 2003 Report Share Posted August 4, 2003 Coconut-Stuffed Sweet Potatoes 4 medium-size sweet potatoes Vegetable oil 1/2 cup sugar 1/2 cup evaporated milk 1/3 cup orange juice Pinch of salt 1 tablespoon grated orange rind 1 cup flaked coconut, divided Scrub the potatoes thoroughly, and rub the skins with oil; bake at 375-degrees for 1 hour or until tender. Let cool to touch. Slice the skin away from top of each potato Carefully scoop out pulp, leaving shells intact. In a bowl combine the potato pulp, sugar, milk, orange juice, and salt. Beat with an electric mixer until smooth. Stir in the orange rind and 1/2-cup coconut. Spoon the mixture into the shells; sprinkle with the remaining coconut.
