You just need to know that they are a high-glycemic food, meaning that potato starch, easily digested, spikes our glucose levels instantly and very high. When we add fat to this, as when we deep fry french fries, we end up with a really bad situation in which the glucose spikes, but the fat blocks the insulin from metabolizing the excess energy, so it all gets stored. That means it becomes fat. This is why being aware of the glycemic index of foods, and choosing at least 50% of your carbs as low glycemic each day, helps you lose weight.
