Although I am told spelt is a form of wheat, I was going to suggest it for you, Laura, because I hear that many people who are allergic to wheat can eat spelt. I am not allergic to it myself, but I make bread from organic spelt on a regular basis - just the same as if it were wholewheat flour - and add 3/4 cup of ground walnuts per loaf. It works just fine and tastes great. And if you're into making your own breads at all, you can make a great rye loaf with a mixture of rye flour and and spelt - and don't forget some ground carroway seeds ;=) (You're not allergic to seeds and nuts?) That way you won't have to worry about dairy in commercial breads, although I imagine that if 'food for life' is being recommended here that it is nicely vegan ;=) There are some great pastas made from brown rice rather than wheat too.
