Dry it off, then let it sit for a while so it's completely dry. Then I just put it in a plastic baggie or saran wrap. If in a few days I see condensation on the bag/wrap I'll put a paper towel in to soak it up. I always feel like the best solution is just ta use it up Never tried freezing cilantro, although I'd love to hear input from someone who has. Guest guest Posted July 24, 2003 Report Share Posted July 24, 2003 I have used frozen cilantro, but it isn't as good as fresh cilantro in uncooked salsa or pico de gallo. It's ok in cooked dishes like black bean soup. You can hang the little bundle of cilantro to dry and use it later. I've been successful using fresh cilantro in pickled peppers; pouring hot vinegar over the cilantro preserves it, but it adds the vinegar taste, which might be ok in some dishes. When I make vinegar pepper sauce, I put peppers, garlic, and cilantro in a jar or bottle and pour just boiling vinegar over it, then put on a tight lid. Used 12-16 oz. Tobasco bottles and similar containers work well. After a week the vinegar picks up the flavors and can be used on southern or southwest dishes. The cilantro looks good in the jar with red peppers.
