Guest guest
This is a great recipe to make when you are outdoors grillin' and enjoying the summer weather. I have a vegan alternative that is made in a similar fashion without the Parm cheese. Simply omit the cheese and in its place use a scoop of powdered onion soup mix; very good. Campout Potatoes 5 medium potatoes, scrubbed and sliced 1/4 cup grated Parmesan cheese 2 tsp minced fresh parsley 3/4 tsp garlic powder 1/2 tsp salt 1/8 tsp pepper 1/4 cup margarine, cubed Place half of the potatoes on a large piece of heavy-duty foil. Sprinkle with Parmesan cheese, parsley, garlic powder, salt and pepper; dot with margarine. Top with remaining potatoes. Fold foil over and seal tightly. Grill, covered, over medium heat for 30 to 35 minutes or until potatoes are tender. Yield: 4 servings ~ pt ~ No matter how bad a state of mind you may get into, if you keep strong and hold out, eventually the floating clouds must vanish and the withering wind must cease. ~Dogen
