Guest guest Posted July 6, 2003 Report Share Posted July 6, 2003 Tonights dinner....all I can say is YUM! This serves two, so adjust your quantities accordingly. 3 oz. Whole-wheat Spaghetti 1 small onion (I used one medium cause I LOVE onion) 2 tsp. olive oil 1/3 cup tofu ( I used extra firm, but firm would probably be better) 1 TBS peanutbutter (I used fresh ground peanutbutter with the no salt or sugar added) 2 tsp. soy sauce (I used light soy sauce) 1-3 tbs. water salt to taste pepper to taste salted peanuts (I skipped this) Cook spaghetti according to directions and drain Meanwhile, chip onion and sauté in oil until lightly brown. Place tofu, peanutbutter, and soy sauce in a food processor (what would we do with a food processor???) and liquidize. Add the onion and just enough water to make a thick sauce. Return the processed sauce to the sauce pan and heat through. Serve over the spaghetti, topped with peanuts and accompanied with a salad. I skipped the peanuts and the salad and instead mixed some steamed broccoli and cauliflower because I needed to use it before it got bad. It was sooo yummy.
