Guest guest Posted July 5, 2003 Report Share Posted July 5, 2003 Citrus Spinach Salad Fresh oranges and orange juice give this spinach salad a delightful twist. 2 cups fresh spinach leaves OR 2 cups torn Romaine Lettuce 1/2 small red onion, thinly sliced 1 fresh navel orange, peeled and separated into sections OR 2 blood oranges, peeled and separated into sections OR 1/2 small can mandarin oranges 2 T toasted pine nuts Dressing 2 T orange juice 2 T white wine vinegar 3 T olive oil (preferably extra virgin) 2 tsp. honey 1 T chopped fresh cilantro 2 tsp. dijon mustard salt & pepper to taste Serves 2 Toss spinach, onion, oranges and pine nuts together.
