Guest guest Posted July 3, 2003 Report Share Posted July 3, 2003 I was perusing the slowcooker mailing list that I read for veggie possibilities and this cassoulet recipe caught my eye. I've never been great at veggifying a recipe, so I'm hoping some of you might lend me your experience. Do you think soy sausage would work in this, in place of the turkey sausage? Would the reduced fat make a difference in cooking? Comments? Thoughts? Opinions? It obviously needs a LOT more garlic, but I'm thinking that it might be REALLY good. Cassoulet: 1 onion, peeled and chopped 1 pound baby carrots 15-ounce can white beans, drained 15-ounce can chopped tomatoes 1 pound mild turkey sausage (could I sub in veggie sausage?) 1 cup red wine or cooking wine 1 teaspoon chopped garlic (bottled is fine) 1 teaspoon crushed thyme Salt and black pepper to taste 1 bay leaf Place all ingredients together in the slow cooker. Cover and cook on low for 8 to 10 hours. Discard bay leaf before serving. This is good served over rice with salad on the side.
