Guest guest Posted June 26, 2003 Report Share Posted June 26, 2003 It's MUCH too hot to have the oven on today, so I had planned to throw some veggie burgers on the grill outside. To my surprise, the bf requested " sausage " and peppers. He doesn't usually like the meat substitutes, but apparently this one passes muster for him. It's not really a recipe, per se, but just something I throw together. Tonite I'll serve them with vegetarian baked beans (from a can, with diced onion added), corn on the cob, and 4 bean salad (from the deli). This meal is tasty, fast, easy, and best of all it doesn't heat the house up now that summer seems to have arrived with a vengence! " Sausage " and Peppers 1 pkg Boca Italian Sausage (or another brand, whatever kind you prefer) 1 each red, yellow, and green peppers sliced into thin strips (or any combination of peppers, I just like all the pretty colours) 1 medium onion, sliced Italian Salad dressing (I use Kraft fat free, but just use your favourite, or make your own) Combine the peppers and onions, and dress with the Italian salad dressing. I prefer to let them marinade a bit in the fridge, for an hour or so, but it's not necessary. Wrap the seasoned peppers and onions into a foil pouch. Cook on a grill at medium heat for 15 - 20 minutes (or until tender), turning the foil package occasionally. At the same time, grill " sausages " according to package directions. I serve them on lightly toasted grinder rolls, piled high with lots of the peppers/onions and some spicy brown mustard. This is great for a BBQ/picnic. You can also slice the sausages, toss them with the peppers, and serve over pasta or on their own. -- Sherri Question _your own_ authority. They are so much more healthy than the fatty flesh meat sausages and you don't feel like you are missing out at all as the flavor is wonderful.
