Guest guest Posted June 23, 2003 Report Share Posted June 23, 2003 sunday is my gourmet night, and i made a KICK BUTT dinner last night, if i do say so myself! i will try to replicate the recipe here. don't be put off by the length of this recipe; it's not as complicated as it looks: preheat oven to 350 degrees (f). slice very thin: -one eggplant salt all the slices well and place them in one layer on a baking pan that has been sprayed with olive oil spray. spray the slices as well. put in oven. at the same time, put: -one head of garlic into the oven. rub the outside of the head thoroughly with olive oil first (this is for baking purposes only and does not add more fat to the dish as it does not leach into the garlic). bake for about 10-15 minutes in the oven, or until garlic and eggplant are soft. combine in a large bowl: -2 cups of whole wheat pastry dough -about a teaspoon of sea salt -about a tablespoon of raw sugar -dry herbs to taste-- i used a generous dose of rosemary, garlic powder, sweet basil, and oregano stir a package of baking yeast into one cup of lukewarm water until it is dissolved. mix this into the flour bowl, and stir until everything is well combined. add more flour or water if necessary. let the dough sit and slice: -one small onion (i used a sweet vidalia) into thin rings. grate: -one package of veganrella or other vegan mozzerella cheese. crumble: -four links of vegan sausage (i used smartlinks, italian style) mix together well in a small bowl: -one small can of tomato paste -one 14-oz can of chopped tomatoes (i used muir glen with basil & garlic-- i LOVE garlic ). by now the eggplant and garlic should be ready. take them out of the oven and change the temperature to 400 degrees. peel the garlic cloves and slice them thin. roll out the dough to desired thickness. i have a 14-inch pizza pan and rolled the dough out to fit that. i made the dough a little larger than the pan and then rolled in the edges a bit so that it had a nice, raised edge. spread the tomato mixture evenly across the dough. top with the cheese. cover this with eggplant slices, onion rings, and garlic slices. top with sausage. cook for about 20 minutes, or until everything is cooked through. i was very proud of the way this came out! http://www.melodysmusic.net Quote Link to comment Share on other sites More sharing options...
