Guest guest Posted June 23, 2003 Report Share Posted June 23, 2003 someone asked how i make my spanokopita vegan a while back, so i'll answer as best i can; i don't post many recipes because i tend to just kind of throw things together till they taste good. i think my recipes, written down, tend to not make a whole lot of sense. but i'll try. basically, it is as follows: you will need: 1 pkg. thawed filo dough 1 oven preheated to 350 degrees (f) thoroughly crumble into a large bowl: -2 packages firm tofu add to this: -the juice from 2-3 lemons, depending on how tart you like it -a few dashes of white vinegar -2-3 tbsp olive oil (omit if you are on a lower-fat diet) -generous sprinkling of sea salt -generous sprinkling of the following herbs, to taste: -garlic powder -dill -lemon-pepper -parsley -any other herbs you enjoy stir very well and add to this: -1 10 oz pkg thawed frozen spinach, blotted very dry, or the equivalent in fresh spinach, also blotted very dry -(optional) 1 10 oz pkg thawed frozen brocolli, blotted very dry, or the equivalent in fresh spray 7-10 of the individual sheets of filo with olive oil spray, or brush them with a pastry brush dipped in olive oil, and stack them on a baking sheet as you go. once you have used half the package, pour the spinach-tofu mixture on and spread it evenly across the filo. top with another 7-10 of the filo sheets, spraying/brushing and stacking as you go. bake for 20 minutes or so, until the top is golden brown and cooked through. enjoy! http://www.melodysmusic.net Quote Link to comment Share on other sites More sharing options...
