The original recipe where I found this idea had listed some sweetener; a teaspoon of honey, I think. I didn't add that as I thought the recipe was delicious without. This was especially good served on toasted country rye bread. Curried Egg Salad 1/2 cup mayonnaise 1/2 tsp ground curry dash ground ginger 6 hard-cooked eggs, chopped 3 green onions, sliced 6 slices whole wheat bread Salt & pepper to taste Sliced tomato & sprouts, optional In a bowl blend the mayonnaise, curry and ginger. Stir in the chopped eggs and green onions. Divide the mixture among bread slices and spread to cover. Top with tomato slices and sprouts; sprinkle with salt and pepper.
