Guest guest Posted June 20, 2003 Report Share Posted June 20, 2003 this is a staple...have in fridge every week..love it..mmm although hubby is tired of lol he ehee niccii @@@@@ Spanakortizo 1 cup rice ( i use uncle bens) 1/8 cup olive oil( i use the greek more flavor) 1 can tomato paste( i use flavored when i have0 1 bag spinach (washed) 6-8 Gr onion 1-2 onions 1-2 parsely 4-6 cups water salt and pepper to taste Chop onions and fry in olive oil in a large pot..when done to your likeing add spinach and let it cook till wilted well...add rice, water,parsely,tomato paste and salt and pepper.I use med - med low and cover..( rice cooks faster this way..start with 4 cups water (must cover veggies at least)and add as you go..more onions you add more you will need..portions? unsure never measured this is all in teh head lol hands pinches ect...measured out lol and i NEVER measure hope you like !!
