I said I didn't believe it anyway! =) Ok here is a sandwich, I'm lazy so this is all you get for now. I can't take credit for the recipe, although I did tweak it a little. ---- Cucumber Cheese Melt ---- **as for the ingrediants if you are just making one sandwich adjust accordingly. You can use goat cheese if you don't like bleu. ** 1/2 package fat-free (8 oz) fat-free cream cheese 2 tablespoons crumbled blue cheese 8 slices multigrain bread 1/4 cup apricot speadable fruit *see below* 16 cucumber slices (or however many) 4 slices fat free swiss cheese butter flavored cooking spray 1. Mix cream cheese and bleu cheese (or spread cream cheese on one slice and sprinkle the bleu cheese over it for one sandwich), spread on 4 slices of bread. Spread 1 tablespoon spreadable fruit on the other 4 slices of bread. Inside place the cucumbers, and swiss cheese. 2. Spray skillet with cooking spray (I acutally don't use butter flavored and its still delicious) grill until browned. Before flipping sandwich to brown other side, spray the bread with a little more cooking spray. --Note about the fruit spread. I haven't tried the apricot, I use low sugar raspberry and its really really good. If you use a jam or fruit spread (don't use jelly) with normal amounts of sugar you might want to use a little less... jams or fruit spreads that might also be good: blackberry, strawberry and probably more! Although grape sounds scary to me if someone tries it let me know how it goes. Enjoy!! So hows that for weird?
