Guest guest Posted June 20, 2003 Report Share Posted June 20, 2003 Easy Broccoli Soup 4 cups vegetable broth 1 large bunch broccoli, chopped (about 5 cups) 1 1/2 cups chopped onion 3 bay leaves 6 Tbs margarine 7 Tbs all-purpose flour 3 cups milk Salt and pepper to taste In a saucepan, bring vegetabel broth to a boil. Add broccoli, onion and bay leaves. Reduce heat and simmer until broccoli is tender; remove bay leaves. Meanwhile, in another saucepan, melt margarine. Stir in flour to make a smooth paste. Gradually stir in milk. Cook over medium heat until mixture is hot and thickened, stirring occasionally. Add 1 cup of the broccoli stock to milk mixture; stir until well blended. Gradually ladel in all remaining broccoli stock to milk mixture. Heat and stir until blended. Season with salt and pepper to taste.
