Now pucker up and make ready for lemon tasting kisses from powder sugared lips.... *mwah* Lemon Bars Crust: 1 cup all-purpose flour 1/3 cup margarine, softened 1/4 cup confectioners' sugar Topping: 1 cup sugar 2 eggs 2 Tbs all-purpose flour 2 Tbs lemon juice 1/2 tsp lemon extract 1/2 tsp baking powder 1/4 tsp salt Confectioner's sugar Combine the crust ingredients and pat into an 8 inch square baking pan. Bake at 375F for 15 minutes. Meanwhile, for topping, combine the sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust. Bake at 375F for 18 to 20 minutes or until light golden brown. Dust with confectioners' sugar.
