Guest guest Posted June 19, 2003 Report Share Posted June 19, 2003 do to religion we fast on w & friday an dday before comm sooo after my 2 week period i have set to get use to i will be doing vegan on these days..sooooo out come some of those recipes. regards niccii @@@@@ Greek Grainberry Salad 1 cup spelt berries 4 cups water 1/2 cup thinly sliced red onion 1/2 cup julienned seedless cucumber 1/2 cup julienned red pepper 2 tablespoons minced fresh dill 1 tablespoon minced fresh mint 1/4 cup extra virgin olive oil 3 tablespoons fresh lemon juice 1 garlic clove; minced 1/2 cup crumbled feta cheese; (optional) Salt and white pepper 6 servings 1. In a medium saucepan, combine spelt berries and water. Bring to a boil, then reduce heat and simmer for 1 hour, or until just render. Drain well and chill. 2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper, dill, mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if desired.
