Guest guest Posted June 19, 2003 Report Share Posted June 19, 2003 mmm into the munchies lately can you tell? regards a beat niccii @@@@@ Greek Garlic Sauce For Raw Vegetables 8 large clov garlic; peeled 1 teaspoon coarse sea salt 6 thick slices good; stale peasant -- bread, crusts -- removed 1 cup lightly toasted; blanched almonds 1/4 cup fresh lemon juice; or to taste 3/4 cup extra virgin olive oil 2 teaspoons drained and rinsed capers; (optional) 3 tablespoons chopped parsley and/or chives Ground fresh black pepper to taste In a mortar and pestle or food processor, crush garlic with salt until smooth. Soak bread in warm water for 2-3 mintues and then squeeze dry. Add garlic, bread and remaining ingredients to food processor and process until smooth. Add drops of water if necessary to make a smooth sauce. Store covered in refrigerator up to 3 days. Yield: approximately 2 cups Converted by MC_Buster.
