Guest guest Posted June 14, 2003 Report Share Posted June 14, 2003 I am probably the poorest excuse for a vegetarian you will find. <grin> and not just because I fall off the wagon once or twice a year. I read the posts about food and who is having what, check out the recipes etc and think... Hmm, don't like that, hate that, can't eat that.... I have never considered myself a picky eater. I 'll eat most anything once as long as it isn't a bug. Are bugs considered meat? Anyway... When I first started toying with being a vegetarian I bought ALL the neccessary staples and I do mean all. My cupboards looked like the local health food store plus. I bought a dozen cookbooks, Moosewood, Laure's Kitchen, Nikki and David Goldbeck, you name it , I bought it and I tried recipe after recipe after recipe. I discovered a few things: I hate brown rice I don't like whole wheat, wheat berries, cracked wheat. I don't like bulgur or kasha I don't much like couscous I hate falafels, even the really good ones (so I'm told) at the Indian restaurant. I don't like lettuce much although I am eating Romain more Aside from bananas and berries, I don't like fruit. I'm not fond of many spices so have trouble " masking " the taste of other things. I do like legumes but not lentils so much. Love beans, lotsa beans, all kinds. I'm really fond of vegetables especially root vegetables. I like instant rice ( sad but true) and other forms of white rice especially Basmati. I like heavy thick whole grain breads and I absolutely adore nuts. Needless to say I have learned to be very creative with what I do like. It is funny how, when I wasn't a veggie, I always thought of myself as a food lover - eat anything etc. That was because, I guess, I never thought of eating all this other stuff. Course at that point, I didn't like red meat much and was eating mostly chicken, dairy and lots of veggies. When I became a veggie and started cooking all these " wonderful " tasty dishes made from grains and stuff I thought, 'My gosh, I'm picky and these are really gross. How can people eat this stuff " . Anyone else out there not fond of traditional veggie fare? I'd hate to think I was the only picky eater in the bunch. ANd the only one who is not fond of wholesome, whole foods. Oh and a guestion, why do raw food people call it eating living food? After you pick it, it's a goner and personally, just the name - living foods, makes me not want to eat it. I always get the feeling I would be eating something that is still breathing. I never considered myself a picky eater, but other people have certainly called me that. I'm allergic to mushrooms, which seem to show up in a LOT of veggie recipes. I'm not a huge fan of tofu in a lot of things either (though I do have some recipes where I enjoy it). What you might try doing is combining foods. For example: - I don't like plain couscous, bulgar, etc. but when I mix them with other things I've found them quite tasty. Near East makes some interesting combinations called " creative grains " too. - I never buy iceberg lettuce, but salads made with baby spinach or a variety of other mixed greens are a staple around my house. - Instead of eating plain brown rice, try using brown rice in things like Spanish or Mexican rice or a pilaf. Mix some (brown) Mexican rice in with your beans when making burritos, enchiladas, etc. - Get a bread machine and bake your own breads. You can load them up with things like 7 grain cereal, cracked wheat, stone cut oats, toasted bran, etc. to get the goodness of the grains. It also gives you control of the amount of fats, etc that go into your breads. Bake with whole wheat flour instead of white/all purpose. - Experiment with fresh herbs as seasonings, which often have a milder flavour than dried spices. - Cruise the files list here. There are some REALLY good recipes buried in there. I don't think there's a set menu that a veggie has to eat.
