Guest guest Posted June 13, 2003 Report Share Posted June 13, 2003 It was a success! It makes a LOT though, which I guess I should have noticed from the ingredient list. Anyway, lots is ok, since we loved it. Even the bf, who doesn't like eggplant as a rule said it was great and took home half the leftovers for him and his kids. I served it with a long grain and wild rice pilaf, and fresh berries for dessert. It required a bit of time to chop everything, but once in the pot there was nothing to it, literally. I didn't even peek or stir while it was cooking, until it was time to add the tomato paste, etc. at the end. Lots of flavour, pretty colours, definitely going to be added to the list of things to make again. I had some cold for lunch, stuffed into a pita, and it was wonderful that way too. I don't eat olives, so I didn't add them, but added a healthy splash of balsamic vinegar with the tomato paste at the end to give it a bit of tang. I'm also not a big salt eater, so I didn't add any while it was cooking.
