Guest guest Posted June 13, 2003 Report Share Posted June 13, 2003 Oh, my gosh. I baked this morning and one of things I made was a bean pie. Is it ever good. I impressed myself <grin> 2 Crust Bean Pie 1 19 oz can of pinto beans, drained 3/4 cup coarsley chopped onion 1/2 cup coarsley chopped celery 1/3 cup salsa 1 1/2 cups shredded cheddar cheese 1/2 cup shredded mozzarella cheese 1 teaspoon garlic salt 1/2 teaspoon cayenne pepper Generous shake of black pepper In a microwave bowl with lid, microwave the beans, onion, celery and spices until the onions are transparent, about 6 minutes. If there is a lot of fluid, drain almost all of it out. Mix in the salsa. Put half the mixture in the bottom of the pie shell, top with half the cheese, put the rest of the mixture on and top with the rest of the cheese. Put the top on the pie and seal very well. Just put a small vent hole in the center of the top crust. Bake at 325 degrees in a preheated oven for 1 full hour. Let cool about 10 minutes before serving. It was wonderful. I think I just discovered a new favourite lunch recipe. Hope you enjoy it too. Here is my pie crust recipe. Makes enough for 3, 9 inch, 2 crust pies - 5 1/2 cup all purpose flour 1 lb of shortening 1 tablespoon lemon juice 1 fork beaten egg 1 teaspoon salt Cold water Cut the shortening into the floor until it looks like small peas. Mix the salt and vinegar in with the egg and add to the flour mix. Add just enough water to form a soft ball. Refrigerate for and hour. Divide into six pieces. Roll each piece out on a floured surface. This is the only recipe I use that makes a flaky crust, for me anyway. I'm gonna have to try this....good to play with too by adding other ingredients. Thanks for sharing...haha now I'm hungry. It's in the files now. I think it is even better reheated. I would imagine you could just throw anything in it and it would come out good.
