AACK! Fell off the wagon + Recipe

Well yesterday I fell off the veggie wagon. That old chicken got me again.

That's what happens when you haven't got anything prepared in the freezer for

those fast and easy lunches. Today I am doing a major OAMC marathon so I'll

have lots of " fast foods " for lunches and quick suppers. I am also all out of

TVP granules and chunks and it's an hours drive into the city to get some.

I'm not up to that today for sure.

 

My blood pressure was way up again so have to start remembering to take the

pills and lose the salt. Life can be such a * & ^ch sometimes.

 

Quick Rice Patties

 

1 cup water

1/2 cup peanut butter - smooth or crunchy

1 cup Instant Rice

1 large egg beaten

Salt and Pepper to taste

Garlic powder to taste

 

Mix everything except the egg into a sauce pan. Heat and stir until it comes

to a boil. Remove from heat. Cool in fridge stirring frequently so the

inside cools too. Stir egg into mix then keep in fridge another 30 minutes or

until the mix is quite cool. This firms the mix up enough that you can shape

it.

 

Shape into 4 larger or 6 smaller patties. Place on a greased cookie sheet

and pake at 375 degrees for 10 minutes. Flip over and bake another 10 minutes.

 

These have a nice delicate flavour that would get lost used as a hamburger

pattie. I serve them with a mushroom " gravy " , mashed potatoes and some nice

steamed carrots.

 

You can't really taste the PB surprisingly enough.

 

 

Gravy

 

3 or 4 large mushrooms, diced

1 small onion diced.

1 clove minced garlic

bit of butter

1 1/2 cups soy mix or milk

salt and pepper to taste

dash of cayenne pepper for a bit of a bite

2 teaspoons of cornstarch mixed in a bit of water ( may need a bit more

cornstarch. I don't measure so I am just guessing at the 2 teaspoons)

 

In the butter, saute the mushrooms, onion and garlic until the onion is

transparent. Add all the other ingredients and stir over medium heat until you

reach the consistency you want. Serve with anything you'd want to use gravy on.
