Oatmeal Burgers - ovo/lacto

Oatmeal Burgers

 

1 tablespoon butter

1 cup chopped Spanish Onion

2 large eggs

1 cup regular oatmeal

1/2 cup soy milk

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

shake or two of ground savory (optional)

salt to taste

 

Cooking oil or cooking spray and a teflon pan.

 

Beat the eggs in the soy milk until frothy. Heat butter in fry pan and cook

onions until they are clear. Add to egg mix along with the oatmeal and

spices. Mix well. Let stand in the fridge for 15 or 20 minutes.

 

To cook: Heat a little oil in a no-stick pan. Drop the mixture, 1/4 cup at

a time onto the fry pan and shape into a patty shape with a spoon. Cook until

brown on bottom. Flip and cook till brown on the other side. Use as you

would a hamburger.

 

Variations:

 

You can add 1/2 cup grated cheese to the mix. It gets a chewier texture which

is nice.

You can also add chopped peppers and celery if y ou are so inclined.

 

If you are a lazy cook, I drop the thinks on a sprayed cookie sheet. Play

with them until they are sort of round and cook in a 350 degree oven till the

bottom is done. Then I sprinkly the top with grated cheese, turn off the oven

and let the cheese melt a bit before serving. Saves flipping the second time

and they are done by the time the bottom is browned anyway.

 

I have tried these without the egg and they don't hold together very well but

the mixture does crumble and brown up nicely for use in other things like

tacos or in pizza topping.
