I loved the idea of mixing peanut butter with carrots, yogurt and pineapple, but hated their ingredient list that included raisins and mayonnaise. In place of the mayo, I just opted to use a bit of reseved pineapple juice, then I skipped the raisins altogether. Feel free to include the raisins back in if you enjoy them. Peanutty Carrot Salad 2 cups shredded carrots 1 can (8oz) crushed pineapple, drained (reserve juice) 1/2 cup sunflower kernels 1/2 cup salted peanuts 1/4 cup peanut butter 1/4 cup vanilla yogurt Lettuce leaves In a bowl, toss the carrots, pineapple, sunflower kernels and peanuts. In a small bowl, combine the peanut butter, yogurt and just enough reserved pineapple juice to make it a smooth dressing (I'd estimate I used about 3Tbs, maybe a bit less); mix well. Pour over carrot mixture and stir gently to coat. Serve in lettuce-lined bowls.
