Guest guest Posted June 4, 2003 Report Share Posted June 4, 2003 This is a recipe I threw together one day when I had leftover Quorn roast sitting in the refrigerator waiting to be used up. You can use any veggie un-chicken meat diced up in this if you don't eat Quorn roast; that should work fine. I got the idea for this from a quick cooking cookbook, but changed it to fit our tastes (as in dill relish and hot sauce; hold the tuna etc). Cucumber Boats 3 medium cucumbers About 1 cup diced Quorn brand roast 2 hard-cooked eggs, chopped 1/2 cup shredded cheddar cheese 1/2 cup diced celery 1/4 cup mayonnaise 2 Tbs dill pickle relish 1 Tbs finely chopped green onion 1 tsp lemon juice Salt and pepper to taste Couple of dashes hot sauce (optional) Cut cucumbers in half lengthwise; remove and discard seeds. Cut a thin slice off bottom of cucumber shells if necessary so each sits flat. In a bowl, combine the remaining ingredients. Spoon into the cucumbers. Serve immediately.
