Guest guest Posted June 4, 2003 Report Share Posted June 4, 2003 Just thought I would pass on a couple of recipes this morning: Baked Rice Balls - good hot or cold Major Protein - serves two - you can double or triple this recipe 1 cup cooked brown rice ( I use white because I don't like the taste of brown) 1 egg 1/2 tsp. garlic salt pepper to taste 1/2 cup ground unsalted nuts of any kind ( I usually omit this) 1/2 cup grated cheddar cheese 1 teaspoon lemon juice about 1/3 cup wheat germ for rolling. Mix everything but the wheat germ together well. With wet hands roll into balls using 1 rounded teaspoon of mixture per ball. Roll in wheat germ and place on a greased baking sheet. Bake for 30 minutes or until the bottom is nicely brown. Serve with a sauce or gravy or just eat like that. They are great. Quesadillas O'Neil Syle 4 oz of softened cream cheese 1/3 cup of black bean salsa - medium or hot 1/3 cup chopped sweet red pepper 1 large, very firm tomato seeded and diced 3 green onions with their tails on, chopped 6 large radishes cleaned and chopped 1 stalk of celery chopped 1 1/2 cups grated Jack or medium cheddar cheese 6 10 " flour tortillas Mix the bean salsa with the cream cheese and spread on the tortillas. Mix all the veggies together and sprinkle over the cream cheese mixture. Top with the grated cheese. Fold each tortilla in half. Press edges together to seal. Place on an ungreased baking sheet. Bake in a PREHEATED 425 degree F. oven for 10 minutes or toast under the broiler. Cut into wedges and serve hot with dipping sauces.
