Guest guest
Whipped this up for my class on Saturday and everyone loved it. Not bad for throwing a bunch of leftovers together :-) 1 tablespoon olive oil 1 pkg TSP (I used Yves Mexican ground) 3 cups tri-color shell-shaped pasta 1 can diced tomatoes 1 small can tomato paste 1 cup water 1 small red pepper, diced 1 small green pepper, diced 1 small onion, diced 3 jalepenos, diced Garlic to taste (I used lots) Cumin Chili Powder Garlic Powder Salt and Pepper to taste (sorry I don't have exact measurements...) Cook pasta according to directions. In medium frying pan, saute the peppers, onions, and garlic until onions are transparent. Add TSP and mix with vegetables until heated. Add tomatoes, tomato paste and water, stirring thoroughly. Add seasonings. Bring to a boil, cover, and simmer on low about 20 minutes. Combine " sauce " and pasta. Can be served hot or cold. For garnish, add some fresh cilantro.
