Bean Sausages 19 oz can your choice of white or red kidney beans, drain and reserve the liquid 1 cup bread crumbs (fine) 1 egg (if you are vegan then just up the water and omit the egg) Small amount of soy or rice milk or use the juice you drained off the beans 1 little green onion finely minced Garlic salt to taste Pepper to taste Small sprinking of ground savory (optional) Corn Meal for rolling in. Mash the beans either in your processor with the steel blade or by hand with a fork or potatoe masher. Place in a bowl. Add all the other ingredients except the corn meal. Mix together adding a little liquid as you go until you have a thick paste. Don't make them too wet or they will not hold their shape. Shape into sausages as big or small as you like. Or, you can opt for bean balls which are sometimes easier to make. Roll them in the cornmeal. Cooking: Here you have a choice. You can fry the little guys in oil or margarine, turning them until they are brown on all sides, OR you can pop them on to a greased cookie sheet and bake at 350 degrees F., turning occassionally until they are brown. The nice thing about these is that you can double or triple the recipe without any trouble, you can make sauges, balls or patties and you can change the taste just by changing the spices and the type of bread crumbs you use. You can use them as sausages with veggies, taters and a salad, as patties in hamburgers, as hotdogs in buns, as balls with sauce and pasta. The choices are many. My Favourite Sauce: 1 cup of plain soy milk, 1 heaping teaspoon of tahini and 1 teaspoon of peanut butter. Put in a saucepan on medium heat and beat till smooth. Keep heating and stiring till it reaches the thickness you like. This sauce is great on everything.
